Caramelized Jerusalem Artichoke Soup
INGRIDIENTS
- Jerusalem Artichokes, peeled 100g
- Ave-Natur Oat For Cooking 50ml
- Onion stock (onions, thyme, water) 100ml
- Ave-Natur Oat For Cooking 200ml
- Hazelnuts, toasted 1tbs
- Ave-Natur Oat For Whipping (whipped) 50ml
METHOD
- Place peeled Jerusalem artichokes into an oven tray and pour Ave-Natur Oat For Cooking generously on top, sprinkle sea salt flakes
- Bake in 175C / 45min
- Put caramelized artichokes into a blender
- Pour hot onion stock and Ave-Natur Oat For Cooking into the blender and mix on high speed until it becomes smooth
- When serving, top with Ave-Natur Oat For Whipping
